Cream and Candied Sweet Potato Pie

  • Mix crumbs, sugar, and butter.
  • Using back of spoon, press mixture on bottom and sides of pie plate.
  • Bake 8 minutes at 375 degrees Fahrenheit. remove to wire rack and cool completely.
  • Mix 1 cup sugar, cream cheese, and milk.
  • Spread evenly over cooled crust.
  • Chill until set.
  • Cook potatoes, 1 cup sugar and water in covered pan on medium-high for 10-15 minutes, or until tender. remove lid and cook until candied.
  • Remove from heat.
  • Add 1 teaspoon butter and vanilla; stir.
  • When slightly cook, drain off excess syrup.
  • Spoon potatoes over cream-cheese mixture.
  • Top with whipped topping.
  • Refrigerate.
