Ed's "now famous" tomato soup!
- Sauté garlic and scallions in heated oil
Add black pepper/cayenne, simmer for 2-3 minutes.
Add crushed can of tomatoes, plus equal amounts of water, i.e. 28 oz.
- Peel skin off sweet potatoes, slice and add to soup mixture.
With a hand held blender, mix thoroughly,
Add a handful of chopped dill towards the end of the cooking process, about 30 minutes.
- * You can vary the amount of peppers/garlic/onion/ according to your preferences.
- NOTE: the sweet potato is the base for most baby foods; thus, you can play with the "creaminess texture" by how much you add.
