Home Fried Fresh Sweet Potatoes
- Cover sliced, peaked sweet potatoes with cold water.
- Drain on paper towel. Heat oil in skillet and place potatoes in pan.
- Sauté, covered, for 3 minutes over medium heat.
- Uncover, turn heat up slightly and ry 5 minutes more or until brown and crisp.
- Season with salt.
- Yield: 4 servings
