Spicy Sweet Potato Pancakes

  • Mix and toss with grated potato & onion
  • Stir in 1 egg lightly beaten
  • Heat enough vegetable oil to cover bottom of non-stick skillet over med high heat
  • Pres 3 tbsp mixture into a round, and put in pan
  • Cook 3 min until brown & crispy, flip & cook 3 min more until inside is hot
  • Serve with coriander yogurt sauce spooned on top.
  • Makes 12 pancakes, great served with eggs
