Sweet Potato Butter Roll

  • Glaze:
  • Cook sweet potatoes, drain, and puree.
  • Add sugar, crushed pineapple, pineapple juice and orange juice.
  • Boil and set aside until dough is ready for mixture.
  • Dough:
  • Cut in shortening until mixture resembles coarse meal.
  • Add milk and mix well with wooden spoon until mix makes soft dough.
  • Turn dough out onto lightly floured surface.
  • Knead lightly 10-12 times.
  • Roll dough to 1/8" thickness and cover with squeeze butter and sprinkle with sugar.
  • Roll up like a jelly roll, cut in 1/2 inch pieces, and place in dish.
  • Broil until golden brown.
  • Turn oven down to 400 and cook 5 minutes.
  • Pour glaze on top and return to the oven for 15 minutes or until done.
  • Great when served hot.
