Sweet Potato Cinnamon Rolls

  • Dissolve yeast in lukewarm water; add milk, melted shortening, sugar, salt and 4 cups flour and eggs.
  • Mix with electric mixer until thick, then knead remaining flour.
  • Refrigerate overnight.
  • Boil sweet potato, mash and mix butter to taste.
  • Take dough out and roll thin on floured board and spread with butter and light layer of sweet potato.
  • Cover heavily with layer of cinnamon and sugar in that order.
  • Roll up light a jelly roll.
  • Cut ½ inch to ¾ inch thick and place on buttered pan and spread with butter.
  • Allow to rise 3 to 4 hours at room temperature or until double in bulk.
  • Bake at 350 degrees until light brown.
  • Do not over-bake.
  • Brush with glaze after baked.
  • Glaze:
  • ½ cup milk
  • 1 box powdered sugar
  • 1 teaspoon vanilla
  • Brush rolls while warm.
