Sweet Potato Cream Puffs

  • Using a saucepan melt margarine in water.
  • Add flour and salt all at once.
  • Stir vigorously, cooking until mixture forms a ball of dough.
  • Remove from heat and cool slightly.
  • Add eggs one at a time and beat until dough smoothes out. (Each time the dough will separate and look funny-just keep stirring and it will smooth out).
  • Drop dough by tablespoons on a greased cookie sheet leaving about 3 inches between each one.
  • Bake in hot oven (450 degrees) for 15 minutes, then reduce heat to 325 degrees for 25 minutes.
  • Remove from oven and split.
  • Turn off oven and set puffs back in to dry out (20 minutes).
  • Cool on rack and fill with your favorite custard, ice cream or jello pudding just before serving time
  • Custard:
  • Combine in mixing bowl ¾ cup sugar, 3 tablespoons cornstarch and ¼ teaspoon salt.
  • Add 2 eggs and mix well. Blend in 2.5 cups milk.
  • Pour mixture into saucepan containing 2 tablespoons hot melted margarine.
  • Stir until thick.
  • Remove from heat and add 1 teaspoon vanilla and 1 cup mashed sweet potato.
  • Fill cream puffs when ready to serve.
