Sweet Potato Fool

  • Mix all ingredients, cook over medium heat until thick. Chill well or cool over night.
  • Part #2:
  • With mixer at medium speed beat cream, sugar, and vanilla until stiff.
  • Fold whipped cream into sweet potato mixture to create a Marbled effect.
  • Spoon mixture into 8 wine glasses or dessert bowls; sprinkle with 1 square of semisweet chocolate-grated.
  • Refrigerate until ready to serve.
  • *The whipped cream mixture may be halved for a more sweet potato taste.
