Sweet Potato Fool
- Mix all ingredients, cook over medium heat until thick. Chill well or cool over night.
- Part #2:
- With mixer at medium speed beat cream, sugar, and vanilla until stiff.
- Fold whipped cream into sweet potato mixture to create a Marbled effect.
- Spoon mixture into 8 wine glasses or dessert bowls; sprinkle with 1 square of semisweet chocolate-grated.
- Refrigerate until ready to serve.
- *The whipped cream mixture may be halved for a more sweet potato taste.
