Sweet Potato Pie

  • Pastry:
  • Combine flour and salt in food processor, fitted with metal blade.
  • Using pulse button, cut in butter until mixture resembles coarse crumbs.
  • Beat together egg and vinegar in measuring cup; add enough cold water to measure 1/3 cup.
  • Add to flour mixture and process until dough begins to clump.
  • Press dough into a ball and refrigerate until chilled through.
  • Roll pastry between 2 pieces of waxed paper.
  • Line a 9 inch pie plate with the pastry and chill for 15 minutes.
  • Filling:
  • Beat eggs until foamy; blend in sweet potatoes, cream, brown sugar, salt and spices.
  • Pour into prepared pastry shell.
  • Bake in 425 degree Fahrenheit and bake for 40 min longer or until tester inserted in center comes out clean.
  • Serve with whipped cream.
  • Makes 6-8 servings.
  • 2nd Recipe:
  • Mix potatoes, sugar and oleo well.
  • Add other ingredients and mix well. pour into crusts.
  • Bake 1 hour at 350 degrees.
  • Makes 2 pies.
