Tipsy Roll

  • Grease 15 by 10 by 1 inch baking pan with melted butter.
  • Line with waxed or parchment paper; butter paper.
  • Beat egg yolks in small mixer bowl; gradually add 2/3 cup of sugar beating until thick.
  • Beat in sweet potatoes, flour, nuts, brandy, baking powder and spices.
  • Beat egg whites in large mixer bowl until foamy. gradually add remaining sugar, beating until stiff peaks form (tips stand straight), fold into yolk mixture.
  • Pour evenly into pan.
  • Bake at 375 degrees 15 to 18 minutes or until cake starts to pull away from pan sides and springs back when touched.
  • Turn out on a dish towel sprinkled with powdered sugar.
  • Remove paper and roll up in cloth.
  • Cool at least 1 hour. Unroll cake and spread with filling.
  • Reroll and chill until serving time.
  • Sprinkle with more powdered sugar.
  • Serves 8 to 10 people.
