Sweet Potato Cornbread
- Oil 2 medium cast iron skillets and put into preheated (400 degrees) oven.
- Meanwhile, mix buttermilk, butter and eggs into sweet potato puree.
- Combine cornmeal, flour, sugar, baking powder and salt.
- Add to puree mixture and stir just until combined.
- Pour into hot skillet and bake until golden brown. (25-30 minutes)
