Sweet Potato Cornbread

  • Oil 2 medium cast iron skillets and put into preheated (400 degrees) oven.
  • Meanwhile, mix buttermilk, butter and eggs into sweet potato puree.
  • Combine cornmeal, flour, sugar, baking powder and salt.
  • Add to puree mixture and stir just until combined.
  • Pour into hot skillet and bake until golden brown. (25-30 minutes)
