Delicious Sweet Potato Muffins
- In large bowl, combine sweet potatoes, flour, sugar, cinnamon and salt.
- Add eggs and oil; blend well.
- Stir in pecans and raisins.
- Grease 18 muffin cups or line with paper liners.
- Spoon batter evenly into prepared pans, filling each ¾ full. Bake at 350 degrees Fahrenheit for 15 minutes or until muffins spring back when lightly touched.
- Remove muffins from pan and serve warm.
- Makes about 1 ½ dozen muffins.
