Sweet Potato Bread

  • Mix sugar, oil, sweet potatoes, eggs and vanilla.
  • Add remaining ingredients, mix well.
  • Put equal amounts in 3 standard loaf pans.
  • Cook at 350 for 60-80 minutes.
  • When cool, slice loaves as thick or this as desired.
  • Note: A variation of this recipe reduces the sugar to 2 ½ cups and used 1 ½ teaspoons salt.
  • Part of the flour can be used to coat dates and nuts before adding to the batter.
  • This keeps them from sinking to the bottom.

  • Cream sugar and oil together.
  • Add eggs (one at a time), sweet potatoes, 3.25 cups flour, soda, salt, spices, and vanilla.
  • Coat nuts and dates with 1/4 cup flour and fold into batter.
  • Grease four one-pound coffee cans with pan coating (below).
  • Fill cans half full with batter.
  • Bake at 350 degrees Fahrenheit for 1 hour.
  • This bread is better if stored for a few days.
  • Freezes well.
  • Pan Coating: Mix 2 parts shortening with 1 part flour and keep in refrigerator.
