Sweet Potato Rum Casserole
- Boil potatoes in their skin.
- Drain and peel.
- Mash hot potatoes (approx. 5 cups).
- With electric mixer whip butter, cream, nutmeg, rum and salt and pepper into hot potatoes.
- Turn into buttered 1 ½ qt. casserole.
- Sprinkle with orange rind and nuts.
- Bake uncovered at 400 degrees Fahrenheit for 20 minutes until light brown. (may be frozen)
