Sweet Potato Rum Casserole

  • Boil potatoes in their skin.
  • Drain and peel.
  • Mash hot potatoes (approx. 5 cups).
  • With electric mixer whip butter, cream, nutmeg, rum and salt and pepper into hot potatoes.
  • Turn into buttered 1 ½ qt. casserole.
  • Sprinkle with orange rind and nuts.
  • Bake uncovered at 400 degrees Fahrenheit for 20 minutes until light brown. (may be frozen)
