Sweet Potato Wonton

  • *saute onion & garlic till soft, add yellow curry paste and cook for 1 min
  • *in a small bowl mix soya, salt, pepper & sugar - then add to sauce pan & stir - add sweet potato & cook till soft (~ 5 mins) - add remaining ingredients and remove from the heat
  • *use flour and water to make a paste to close the wonton - put ~1Tbsp of the filling in each wonton and close like a triangle
  • *heat 1 C sunflower oil in a pan and drop the wontons in and cook till they are golden brown, drain on a paper towel and serve with sauce below....
  • Hot Garlic Dipping Sauce
  • 1 C raw (or brown) sugar
  • 3/4 C water
  • 1/2 C white vinegar
  • 2 Tbsp minced garlic
  • 1 tsp salt
  • 1Tbsp Hot sauce
  • *combine all ingredients except hot sauce & cook over medium heat, bring to a boil, stirring, reduce heat & let simmer 20 mins. until thinkend to a syrup consistency
  • *stir in hot sauce & remove from heat
